Fluffy Multigrain Pancakes

A 20-year perfected recipe for light, fluffy pancakes bursting with fiber, omega-3s, and vitamins. Topped with creamy Greek yogurt and warm blueberries, they’re as healthy as they are delicious.
Ingredients
Dry:
  • 1 cup Krusteaz Buttermilk Pancake Mix
  • ½ cup Quaker Steel Cut Oats
  • ¼ cup Trilogy Health Seed (flax, chia, hemp)
  • 1/3 cup whole flax seeds
  • 1 ½ tbsp chia seeds
  • ½ tsp baking powder
  • 1 ½ tbsp cinnamon
  • 1 tbsp nutmeg
  • Dash cayenne pepper
Wet:
  • 1 cup 1% buttermilk
  • ½ cup unsweetened applesauce
  • ½ cup water (adjust as needed)
  • 3 large eggs
  • ¼ cup egg whites
  • 1 tsp avocado oil
  • 1 tbsp vanilla extract
  • 1 tbsp PB2
Add-Ins:
  • 1/3 cup pecans, chopped
  • 1/3 cup dried cranberries, chopped
Toppings (Per Serving):
  • 2 tbsp light Greek yogurt (0% fat)
  • ¼ cup blueberries, heated
Optional: 1 tbsp honey for sweetness
Instructions
  1. Mix dry ingredients in a large bowl.
  2. Whisk wet ingredients in a separate bowl.
  3. Stir wet into dry until just combined. Fold in pecans and cranberries. Add water if batter is thick.
  4. Heat a non-stick skillet over medium. Pour ~2 tbsp batter per pancake. Cook 1-2 min per side until golden.
  5. Heat blueberries until juicy. Top 3 pancakes (standard) or 2 (lighter) with 2 tbsp yogurt and ¼ cup blueberries.
  6. Serve warm, with honey if desired.
